500g ZZ2 Medjool dates, pitted and chopped
250g Butter
1 Cup sugar
1 Pack tennis biscuits, crushed
2 Eggs, whisked
1 Cup desiccated coconut
Place the dates, butter and sugar into a saucepan over medium heat and cook until sugar has dissolved and dates are soft.
Remove from heat, add the biscuits and stir through, then quickly mix in the eggs.
Set aside and let cool. Once cool, use a tablespoonful of the mixture and roll a little ball in the palms of your hands. Roll the ball through the coconut and repeat with the rest of the mixture.
Store in airtight containers in the fridge. This recipe yields 40 to 45 balls.
