4 x ZZ2 Avocados
400g Prawn meat
4 Tbsp Mayonnaise
4 Tbsp Tomato sauce
1 Tbsp Worcestershire sauce
2 Tsp Habanero sauce
Juice of half a small lemon
Handful ZZ2 Spanish Santé tomatoes, halved
2 Spring onions, chopped
Pink peppercorns
Optional:
Lettuce for serving
Fried prawn for garnish
Steam the prawn meat for 5 minutes.
Combine mayonnaise, tomato sauce, Worcestershire sauce, habanero sauce and lemon juice, then add the prawns.
Two serving suggestions:
Halve the avocados, scoop some of the prawn mixture into the avos, add a couple of tomatoes and garnish with spring onion and pink peppercorns.
Line a coupé glass with lettuce, add some of the prawn mixture together with some diced avo and tomatoes. Garnish with spring onion and pink peppercorns.
Add a fried prawn to finish off and enjoy.
