1 ready made swiss roll, or 6 mini swiss rolls
½ cup (125ml) sherry, port or sweet dessert wine
4 preserved green figs, roughly chopped
4 nuggets preserved ginger, finely sliced
½ cup (125ml) flaked almonds, lightly toasted in a dry pan
4 cups (1 litre) good quality ready-made custard
½ cup (125ml) cream
Extra whole cherries, nuts and sliced preserved figs
Slice the swiss roll. Place 1/3 of swiss roll slices in a large glass bowl. Mix the cherries, figs, ginger and almonds together.
Sprinkle with 1/3 of sherry. Sprinkle with 1/3 fruit and nuts. Coat with 1/3 of custard. Repeat layers twice more.
Cover top with half-whipped cream.
Decorate with whole cherries, nuts and sliced figs.
Chill for at least 3 hours.
Replace the ginger with 4 rings of crystallised pineapple, finely sliced.
Preserved figs are not always available. We have often substituted them with crystallised figs for the same delicious flavour.
