2 medium ruby grapefruits
2 medium avocados, sliced
1 teaspoon finely grated grapefruit zest
1 small red onion, minced
1 teaspoon white wine vinegar
Salt
2 tablespoons extra-virgin olive oil
Freshly ground pepper
½ tsp mustard
Juice from half a lime
Watercress leaves
Using a sharp knife, cut the skin and all of the bitter white pith off of the grapefruits. Slice out the grapefruit sections between the membranes. Squeeze the juice from the leftover membranes into a bowl. Add the grapefruit zest, red onion, vinegar, lime juice and mustard and mix thoroughly with a whisk. Season the avocado with salt and pepper arrange on top of the watercress on plates with the grapefruit sections. Drizzle the dressing and serve immediately.
