450 g chicken mince
2 small ripe Afrikados, mashed
100 g feta, crumbled
zest of 1 lemon and juice of ½ a lemon
1 tsp (5 ml) each of salt and pepper
1 large egg
1 Tbs (15 ml) psyllium husk
Cooking oil for shallow frying
1 ripe avo, diced
Combine the “Fritter’’ ingredients until evenly mixed throughout.
Heat enough oil for shallow frying in a large pan.
Spoon a tablespoonful of mixture for each fritter into the hot oil and fry over moderate heat for +- 2 minutes per side. Or until golden brown and cooked through.
Serve topped with diced avo and rocket with extra lemon wedges on the side.
Optional yummy suggestion: serve with tzatziki dip.
Tip: make mini ones for the lunch box – simply adjust the cooking time accordingly.
